Pizza

This tasty piece of cookery will take only 25 minutes to prepare it

Ingredients:
1 12″ pizza base
1 14-oz. can chopped tomatoes
fresh sliced finely basil
2 or 3 pieces of Parma or any other ham, sliced very thinly
4 oz. crumbled cheese
1 tablespoon olive oil

Preheat the oven to 400 F.
Put the pizza base on a baking sheet and spread a layer of tomato over it.
Sprinkle the basil over the tomato.
Tear the ham into small pieces and put the pieces over the pizza. Sprinkle the pizza with the cheese.
Sprinkle the olive oil over the pizza.
Cook your pizza in the oven for 10 - 15 minutes or until the cheese browns and bubbles.
Cut into 8 slices and share.

You can experiment with other toppings on your pizza: olives, peppers, broccoli, avocado, and whatever else to your taste.

Vegan Tart

Ingredients:
To prepare the pastry you will need:
200g/7 oz/1 and a half cups flour: you may take either white or wholemeal
100g/3 and a half oz/ half a cup margarine (vegan)
5 or 6 tablespoons of cold water

Ingredients for the filling:
1 piece silken or firm tofu - about 200g/7oz
half teaspoon turmeric
1 roughly chopped onion
2 cloves of garlic
3 tablespoons soya milk
a pinch of seasalt
And there are some additional ingredients to your choice: chopped tomatoes, sliced mushrooms, sliced onions, cheatin’ ham (which is soy based meat analogue), tinned sweetcorn, diced peppers.

Directions:
Preheat oven to 380F. Rub the margarine into the flour to a breadcrumb texture in a large dish. Add the water gradually and mix to a dough. Roll this out on a floured board to fit your flat pie or quiche dish. Grease dish and line with the pastry.

Combine the tofu, turmeric, soya milk, onion, garlic and salt in a kitchen unit until fairly smooth. Stir your favorite ingredients - mushroom and tomato are great. Even just a plain tart filled with sliced tomatoes is a very nice meal when accompanied with new potatoes and salad. If you are going to cook a sage and onion tart, add a handful of fresh sage to the tofu mixture before processing.
Add the filling mixture into the pastry case and bake in the oven for another 45 minutes or until firm in the middle.

Mushroom patty

To prepare this tasty piece of vegetarian cuisine you need:
500g block of vegan frozen puff pastry, defrosted
some tablespoons olive oil
1 pack of any vegan sausages
1 leek, chopped
10 large flat mushrooms
large handful of cashew nuts
1 tin of red kidney beans
1-2 tablespoons soy sauce
2-3 tablespoons cider or wine
2-3 of bay leaves

Preheat the oven to 400F and cook the sausages. While they are cooking prepare the rest of the filling. Heat the oil and cook the leek for a few minutes until softened with the bay leaves. Roughly chop and add the mushrooms and cook for the next couple minutes. Add the nuts, beans, soy sauce, cider or wine and cook for a short while until the filling is well combined. Chop the sausages into large chunks and place them in a large pie dish with the rest of the filling, remove the bay leaves at this point.
Roll out the pastry and stick it on top. Bake in the oven for 20-30 minutes until the pastry is well risen and golden brown.
It tastes well with roast potatoes and salad.

Easter dessert: Bunny Cake

Bake a plain sponge cake.
Take an 8-inch sponge cake and cut it in half. Smear the layers with frosting and then put the cake on its plain side to frost the body. Decorate with shredded coconut to make the fur. Make a cut into the cake behind the “head” to define the body. To make ears, flatten a large marshmallow and use scissors to cut it in half diagonally. Cut another marshmallow in half and press the rounds into the frosting to create cheeks. Small marshmallows will create pretty little bunny teeth. Beans from jelly will make eyes and noses.
Some tips
Heat the oven to 175 degrees C. Lightly grease two 9 inch round cake pans.
Separate eggs and reserve 2 of the egg whites for the frosting. Cream shortening, add 1 1/2 cups of the sugar, egg yolks, and 1 egg white; continue beating until the substance is well mixed.
Screen flour with baking powder and salt, mix with coconut and add alternately with milk and the almond extract to the shortening mixture. Pour batter into the prepared pans.
Bake at 175 degrees C for 30 minutes. Let cakes cool then take from pans. Sprinkle with crushed coconut on top and sides of cake after icing.

1 cup flaked coconut
1/3 cup corn syrup
2 tablespoons water
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla extract

Cakes

The special place in a culinary art occupy cakes, pastries and desserts. They allow to show brightly your culinary talents and to lay the table in such a way, that it will be estimated at its true worth by your friends and even those, who don’t eat sweets on one or another reasons. It is not very difficult to make a delicious cake. Some patience - and just another culinary masterpiece will be on your table to enjoy you and your friends.

Biscuit cake
Ingredients :
6 eggs
6 table-spoonfuls of powdered sugar
6 table-spoons of flour

To fluff up egg-whites, carefully mixing add powdered sugar and egg yolks to it.
To lay out the pastry in oiled form sprinkled with a flour for baking of cakes and bake.
The baked cake divide in half, cover with cream and decorate.

Coconut cookies

Necessary products:

  • Wheaten flour — 1 glass
  • Baking powder — 2 tea spoons
  • Sugar — 2 table spoons
  • 1 egg
  • Butter — 170 grams
  • Coconut chips — 200 grams
  • Apricot preserves — 2 items of the spoon
  • Margarine — 1 table spoon
  • Vanilla sugar — 1 tea spoon

A number of portions: 6

Time of cooking: 30 minutes.

The way of preparation.

You should mix the flour, the baking powder, sugar and vanilla sugar, then put slices of cold butter on this mixture and chop it up by means of a knife in order to prepare a paste which looks like grain crumbs. Then it is necessary to add an egg, to knead dough, roll it in a sphere, to cover it with a sheet and place ii into the refrigerator for 30 minutes.

Then you can roll out the ready dough in a rectangular layer, thickness of which is 0,7 centimetres, and lay it on a sheet, greased with some margarine.

In order to prepare a dressing, it is necessary to shake up some butter with sugar, to add preserves and coconut chips then mix it very well.

Then you should lay out a regular amount of dressing on dough and bake it 20-30 minutes at 200 °С.

The baked product is necessary to cool for a while, and then it is ready to cut into rectangular pieces.

Some melt chocolate (100 grams) can be added to the cookies.
